Eggplant Souffle - cooking recipe

Ingredients
    1 large eggplant
    1 c. grated cheese
    1 Tbsp. tomato catsup
    2 Tbsp. butter
    3/4 c. bread crumbs
    salt and pepper to taste
    cayenne to taste
    2 tsp. flour
    1 c. milk
    2 tsp. grated onion
    2 eggs
Preparation
    Peel eggplant, cut in pieces and cook until tender.
    Drain and mash.
    Make cream sauce with butter, flour and milk.
    When thick, add eggplant, cheese, crumbs, onion, catsup, seasonings and egg yolks.
    Beat egg whites until stiff and fold into mixture. Pour into buttered casserole and bake in 350\u00b0 oven until knife comes out clean.
    Garnish top with crisp, crumbled bacon, if desired.
