"Hoppin' John" Black-Eyed Peas Delicious - cooking recipe

Ingredients
    1 lb. dried black-eyed peas
    1 Tbsp. salt
    1 clove garlic, cut in half
    1/2 c. oil
    3 cloves garlic, mashed
    3 green peppers, chopped
    3 medium onions, chopped
    1/2 tsp. ground sage
    2 bay leaves, crushed
    3 Tbsp. vinegar
    1 tsp. salt
    black pepper to taste
Preparation
    Wash and
    pick\tover
    peas;
    cover
    with water and soak overnight.\tDrain.\tPlace
    peas
    in
    kettle;
    cover with fresh water and
    season with pork jowl.
    Add salt and garlic halves. Cook peas for
    3 hours or until tender, adding water when more liquid is
    needed.\tJust
    before serving, heat oil in skillet; add mashed garlic, green peppers, onions, sage and bay leaves. Cook until vegetables are soft.\tAdd vinegar, salt and pepper. Pour vegetable
    mixture\tinto cooked peas.
    Blend together and serve. This
    dish\tmay be served over cooked rice for Hoppin' John.
