Calamari-Portuguese - cooking recipe

Ingredients
    3 lb. whole squid (fresh or frozen)
    2 Tbsp. oil
    2 c. chopped onion
    1 garlic clove, minced
    2/3 c. chopped parsley
    1/2 lb. fresh mushrooms, chopped
    1/4 c. tomato paste
    1/2 tsp. salt
    2 c. water
Preparation
    Thaw frozen squid.
    Clean squid according to procedure.
    Cut mantles into quarters.
    Saute onion, garlic and mushrooms in oil. Add squid, parsley, tomato paste, salt and water; cook over medium heat for 10 minutes.
    Cover and simmer for 30 to 40 minutes or until squid is tender.
    Serve over noodles or spaghetti.
    Makes 6 servings.
