Creamy Carrot Casserole - cooking recipe

Ingredients
    4 c. sliced carrots
    1/4 c. chopped onion
    1/4 tsp. pepper
    1/4 tsp. salt
    14 saltine crackers, crushed
    1 Tbsp. butter, melted
    2 Tbsp. snipped parsley
    1/2 c. shredded American cheese
    2 Tbsp. prepared horseradish
Preparation
    In small pan, cook carrots until tender.
    Drain.
    In small mixing bowl, stir together mayonnaise, onion, horseradish, salt and pepper.
    Add to carrots in a casserole dish and stir to combine. In a small mixing bowl, toss together crushed crackers, butter and parsley.
    Sprinkle cracker mixture over carrots.
    Bake in a 350\u00b0 oven about 20 to 25 minutes or until bubbly.
    Add cheese and bake until cheese is melted and mixture is heated through.
    Makes 6 servings.
