Chicken Enchiladas - cooking recipe

Ingredients
    1 3/4 c. shredded Monterey Jack cheese
    1 3/4 c. shredded Cheddar cheese
    3 oz. cream cheese
    1 1/2 c. mild picante sauce
    2 c. chopped chicken, cooked
    1/2 c. diced red pepper
    1/4 c. diced green onion
    1 tsp. cumin
    8 flour tortillas
    shredded lettuce
    chopped tomatoes
    sour cream (optional)
Preparation
    Combine 1 cup Monterey Jack, 1 cup Cheddar, cream cheese, 1/4 cup picante sauce, chicken, red pepper, green onions and cumin. Spoon equally in center of each tortilla.
    Roll and place, seam side down, in greased 9 x 13-inch pan.
    Spoon remaining picante sauce over tortillas.
    Cover with remaining cheese.
