Beef Vegetable Borsch - cooking recipe
Ingredients

2 Tbsp. butter
1 medium onion, chopped
2 carrots, sliced
1/2 head cabbage, shredded
1 Tbsp. minced parsley
1 c. stewed tomatoes
2 cans beef broth
1 Tbsp. vinegar
1 can beets (undrained)
1 or 2 c. diced cooked beef
salt and pepper
1 tsp. or more sugar
sour cream
Preparation

In large kettle, melt butter.
Saute vegetables for 3 minutes. Add tomatoes, broth, vinegar, beets and meat; bring to boil. Cover; simmer for 30 minutes.
Season to taste.
Top with sour cream.
