Better Than Potato Salad - cooking recipe
Ingredients

4 c. cooked long grain rice
8 radishes, sliced
4 hard-cooked eggs, chopped
1 medium cucumber, chopped and seeded
2 c. thinly sliced celery
1/2 c. chopped onion
1 1/2 c. mayonnaise (Miracle Whip can be used)
3 Tbsp. prepared mustard
3/4 tsp. salt
Preparation

In a large bowl, combine rice, radishes, eggs, cucumber, celery and onion. Combine mayonnaise or Miracle Whip, mustard and salt. Mix well. Pour over rice mixture and toss. Cover and refrigerate at least 1 hour. Serves 12 to 14.
