Festive Chicken Salad - cooking recipe
Ingredients

1 small whole chicken breast
2 Tbsp. mayonnaise
1 Tbsp. sour cream
1/2 tsp. curry powder
1/4 c. coarsely chopped walnuts
1/4 c. pineapple chunks
salt to taste
Preparation

Cover breast with cold water in a medium saucepan and bring to a boil.
Remove from heat.
Cover and let stand 1 hour.
Drain, skin and bone.
Cut into 1/2-inch cubes.
Blend mayonnaise and sour cream in medium bowl.
Stir in curry powder.
Mix in chicken, pineapple and walnuts.
Season with salt.
Chill until ready to serve.
Serves 2.
