Marinated Carrots - cooking recipe

Ingredients
    2 lb. baby carrots
    1/4 c. green onions, sliced
    1 green pepper, sliced
    1 c. tomato juice
    1 c. sugar
    1 c. vegetable oil
    1 tsp. dry mustard
    3/4 c. vinegar
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Cook the carrots until tender-crisp.
    Drain. Stir in onions and green pepper.
    Whisk remaining ingredients.
    Pour over vegetables.
    Marinate overnight. Serve chilled.
    Serves 8.
