Lisa'S Hawaiian Kabobs - cooking recipe

Ingredients
    1/2 c. reduced-sodium soy sauce
    1/2 c. unsweetened pineapple juice
    1/4 c. vegetable oil
    1 Tbsp. brown sugar
    1 tsp. garlic powder
    2 tsp. ground ginger
    1 tsp. dry mustard
    1/4 tsp. freshly ground pepper
    1 1/2 lb. chicken breasts, skinned and cut into cubes
    3 c. hot cooked rice
    1 (15 1/4 oz.) can unsweetened pineapple chunks, drained
    1 large green pepper
    1 large onion
    18 cherry tomatoes or tomato wedges
    12 medium size mushrooms (optional)
Preparation
    Combine first 8 ingredients in saucepan; boil.
    Reduce heat and simmer 5 minutes.
    Let cool.
    Pour mixture into a shallow dish.
    Add chicken.
    Toss gently to coat.
    Cover and marinate at least 1 hour in refrigerator.
    Stir mixture occasionally.
