Creole Black-Eyed Peas - cooking recipe
Ingredients

4 slices bacon
1 c. onion, chopped
1 c. green pepper, chopped
1 c. celery, chopped
1 (10 oz.) can Ro-Tel
2 (16 oz.) pkg. black-eyed peas or 4 c. cooked peas
2 to 3 Tbsp. sugar
salt to taste
1 bay leaf
Preparation

Cook bacon in large skillet until crisp.
Remove bacon, reserving drippings in skillet.
Crumble bacon and set aside. Saute onion, green pepper and celery in drippings until tender. Stir in Ro-Tel, peas, sugar, salt to taste, bay leaf and half the crumbled bacon.
Cook over low heat 30 to 45 minutes.
Add water if necessary.
Remove bay leaf and sprinkle with remaining crumbled bacon just before serving.
Makes 6 to 8 servings.
