Ingredients

2 c. margarine
3 c. sugar
5 eggs
3 c. all-purpose flour
1 tsp. baking powder
1 c. milk
1 tsp. coconut flavoring
1 - 4 oz. can coconut
Preparation

Cream margarine and sugar in large bowl.
Add eggs, baking powder, and flavoring.
Add flour and milk, alternating.
Stir in coconut.
Bake in greased and floured 10 inch bundt or tube pan at 325 degrees for approximately 1 1/2 hours.
Cool on wire rack. This can also be baked in small loaf pans which have been greased and coated with additional coconut.
These can be baked and wrapped in foil or plastic wrap for gifts.
They freeze well.
