Sauerbraten Meatballs - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    3/4 c. crushed gingersnaps, divided
    1 egg
    1/2 tsp. caraway seeds
    3/4 tsp. salt, divided
    1/2 tsp. pepper, divided
    2 Tbsp. oil (preferably olive oil)
    1 onion, coarsely chopped
    1 carrot, coarsely chopped
    1 rib celery, chopped
    1/2 tsp. ginger
    2 (14 1/2 oz.) cans beef broth and 1/2 c. more if freezing
    1/4 c. red wine vinegar
Preparation
    Combine beef, 1/4 cup gingersnap crumbs, egg, seeds, 1/2 teaspoon salt and 1/4 teaspoon pepper. Shape into 20 meatballs. In skillet, heat oil over medium-high heat. Add meatballs. Cook until browned (10 minutes). Remove from pan.
