Jollof Rice(Liberia) - cooking recipe

Ingredients
    3 oz. tomato paste
    2 c. raw rice
    2 lb. chicken, cut up
    2 large onions, chopped
    2 bouillon cubes
    1/4 to 1/2 c. oil for browning onions and chicken
    1 c. mixed vegetables
    1 or 2 hot peppers, chopped (optional)
    4 c. water
Preparation
    In a pot with the oil, brown the chicken well (salted and peppered), then fry the onions and one or two hot peppers (optional).
    Boil together the chicken, bouillon cubes, tomato paste, onions, vegetables and raw rice (salt according to taste for the rice).
    After bringing to a boil, turn down to low heat for about 30 to 40 minutes, covered, stirring occasionally.
