Broccoli Casserole - cooking recipe

Ingredients
    1 large head broccoli or 2 (10 oz.) pkg. frozen broccoli, cooked and drained
    4 oz. mushrooms, drained (saving liquid)
    2 Tbsp. butter
    1/2 c. chopped onion
    2 cans mushroom soup
    2 c. cooked rice
    10 oz. pkg. Velveeta cheese (1/3 of a 2 lb. box)
Preparation
    Saute in butter the onion and mushrooms until tender.
    Add mushroom liquid to make 1/2 cup.
    Add water or milk.
    Add soup and rice with cheese.
    Cook, stirring constantly, until cheese is melted.
    Pour cheese mixture over broccoli.
    Cover with crushed Ritz crackers and melted butter, mixed.
    Sprinkle over top of casserole.
    Bake at 350\u00b0 for 20 to 30 minutes.
