1 lb. assorted wild mushrooms, cleaned
juice of 1 lemon
3 Tbsp. butter
1 sprig thyme
3 shallots, minced
1 bay leaf
salt and pepper as needed
3 c. heavy cream
1 tsp. cornstarch
2 qt. stock
