Duck And Sausage Gumbo - cooking recipe

Ingredients
    1 large duck
    1 c. roux (purchased roux)
    3 1/2 qt. water (broth off duck)
    1 tsp. salt
    1/2 tsp. black pepper
    1 tsp. red cayenne pepper
    1/2 tsp. monosodium glutamate
    1 medium onion, chopped
    1 bell pepper, chopped
    1 rib celery, chopped
    1 lb. sausage, cut in slices
    2 Tbsp. Cajun seasoning
Preparation
    Boil duck, using salt, pepper and 2 tablespoons Cajun seasoning.
    Debone duck.
    Use the liquid in gumbo.
    Dissolve roux in water over medium heat.
    Add salt, pepper, monosodium glutamate and chopped vegetables.
    Add deboned duck and sausage.
    Bring to a boil, then lower heat and cook until tender, 1 1/2 to 2 hours. Serve over cooked rice.
    Add okra, if desired.
