Almond And Ginger Two-Rice(Makes 8 To 10 Servings) - cooking recipe

Ingredients
    1 1/2 c. uncooked quick-cooking brown rice
    1 c. uncooked quick-cooking wild rice
    1 (10 oz.) pkg. frozen green peas, thawed
    1/2 c. thinly sliced scallions
    1/4 c. chopped red bell pepper
    1/4 to 1/3 c. canola oil
    1/3 c. tarragon vinegar
    3 Tbsp. Dijon mustard
    1 1/2 Tbsp. freshly grated ginger root
    1/2 tsp. salt (optional)
    1 tsp. freshly ground pepper
    2/3 c. sliced almonds, toasted
    lettuce (for garnish, optional)
Preparation
    Prepare brown and wild rice in separate pans according to package directions.
    Combine in a large bowl and allow to cool. Add peas, scallions and bell pepper.
