Ingredients

1 lb. Dried Apricots
1 3/4 Cups Sugar
3 1/2 Cups Water
Preparation

In food processor, process apricots until very finely chopped. Transfer to 3 1/2 quart electric slow cooker. Stir in sugar and water. Cover and cook on high, stirring occasionally, two hours, or until jam has thickened. Let cool and store in refrigerator up to three weeks or freeze up to three months.
