Ratatouille - cooking recipe

Ingredients
    2 1/2 medium onions, coarsely grated
    5 tomatoes, peeled, seeded and chopped
    2 small zucchini, thinly sliced
    1 medium to large eggplant, peeled, quartered and coarsely chopped
    1/2 c. oil
    freshly ground pepper
    salt to taste
Preparation
    Saute onions in oil until transparent, then add tomatoes and simmer slowly for 15 minutes.
    Add zucchini, eggplant, pepper and salt.
    Simmer 30 to 40 minutes.
    Or, after sauteing onions and tomatoes, place all ingredients into heavy casserole and bake at 325\u00b0 for 2 hours.
