Frozen Waldorf Salad - cooking recipe
Ingredients

9 oz. can crushed pineapple
2 eggs, slightly beaten
1/2 c. sugar
1/4 c. lemon juice
1/8 tsp. salt
1/4 c. mayonnaise
2 1/2 c. unpared apples, diced
1/3 c. celery, diced
1/2 c. walnuts, chopped
1/3 c. mini marshmallows
1/2 c. whipping cream
1 apple, unpared, cut in thin wedges and dipped in lemon juice
Preparation

Drain pineapple; reserve syrup.
Mix in a saucepan syrup, eggs, sugar, lemon juice and salt.
Cook over low heat stirring constantly until thickened (about 20 minutes).
Cool, then fold in mayonnaise.
Combine pineapple, diced apples, celery, nuts and marshmallows.
Mix well.
Beat whipped cream until it peaks.
Fold whipped cream into cooled egg mixture.
Combine fruit and egg mixture.
Turn into mold.
Garnish with apple wedges.
Freeze until serving time.
