Lime-Cottage Cheese Salad - cooking recipe

Ingredients
    1 pkg. sugar-free lime flavored gelatin
    2 c. boiling water
    2 c. cold water
    2 Tbsp. low-calorie mayonnaise
    1 c. low-fat cottage cheese
    1 (8 1/4 oz.) can crushed water packed pineapple, drained
    lettuce leaf (optional)
Preparation
    Dissolve gelatin in boiling water in a medium bowl, stirring well.
    Stir in cold water.
    Chill until mixture is the consistency of unbeaten egg whites.
    Fold mayonnaise into gelatin mixture.
    Add cottage cheese and pineapple, stir well. Pour gelatin mixture into a 6-cup mold coated with vegetable cooking spray.
    Chill gelatin mixture until firm.
    Unmold salad onto lettuce leaves, if desired.
