Grilled Eggplant Appetizers - cooking recipe

Ingredients
    2 medium eggplants
    1 tsp. salt
    2 fresh tomatoes, sliced
    1 tsp. black pepper
    1/2 c. olive oil
    1/2 lb. shredded Mozzarella or Cheddar cheese
    2 Tbsp. chopped fresh basil leaves
Preparation
    Prepare a hot charcoal or gas fire.
    Cut eggplants crosswise into 1/2-inch slices.
    Brush both sides with olive oil and sprinkle with salt.
