Rice And Shrimp Salad - cooking recipe

Ingredients
    1 1/2 c. cooked rice
    1 1/2 c. cooked shrimp, cut into pieces
    1 stalk celery, chopped
    1 carrot, shredded
    3 to 4 Tbsp. mayonnaise
    3 tsp. lemon juice
    1 (6 oz.) jar marinated artichoke hearts, drained and cut up
Preparation
    In a large bowl combine all ingredients except artichoke hearts.
    Mix well.
    Add artichoke hearts and toss lightly.
    Chill. Top with sliced hard-boiled eggs, if desired.
