Jambalaya - cooking recipe

Ingredients
    1 whole cut up chicken
    2 c. brown long grain rice
    1 Tbsp. safflower oil
    2 bay leaves
    8 to 10 shakes Tabasco sauce
    black pepper to taste
    1/4 tsp. cayenne pepper
    1 large onion, diced
    2 pkg. smoked Polish sausage, sliced
    2 cans black-eyed peas, drained
Preparation
    Boil chicken until done (about 1 hour).
    Let it cool enough to take skin off and debone it.
    Save broth.
    Put chicken meat back into broth.
    In six cups of chicken broth, add rice, oil, bay leaves, Tabasco sauce, black pepper, cayenne pepper and onion. After water returns to boiling, cook for about 30 minutes.
    Then add sausage and peas.
    Cook another 30 minutes on medium heat, covered.
