Basic Yeast Dough - cooking recipe

Ingredients
    1 yeast cake
    1 c. lukewarm water
    1 c. milk
    3 Tbsp. sugar
    3 Tbsp. shortening
    2 Tbsp. salt
    6 c. enriched flour
Preparation
    Scald milk.
    Add sugar, salt, shortening and 1/2 cup water. Add yeast which has been softened in 1/2 cup water.
    Add flour gradually, mixing it in thoroughly.
    When dough is stiff, turn out on lightly floured board and knead until smooth.
    Shape into ball. Place in greased bowl.
    Cover and let rise in warm place (80\u00b0 to 85\u00b0) until dough is double in bulk.
    Punch down.
    Let rise again. Mold into loaves.
    Place in greased bread pans.
    Let rise until doubled in bulk.
    Bake in moderately hot oven (400\u00b0 to 425\u00b0) for 40 to 45 minutes.
