Sweet-Sour Red Cabbage - cooking recipe
Ingredients

6 slices of bacon, minced
medium head of red cabbage, chopped
1/3 cup vinegar
1/4 cup brown sugar, packed
1/2 tsp salt
1/4 tsp pepper
1 apple, peeled and chopped
2 Tbsp currant jelly
Preparation

In a skillet, over medium heat, cook bacon until crisp and saute onion.
Drain on paper towel.
Add cabbage to bacon drippings.
Cook over medium heat for 5 minutes, stirring often. Reduce heat to medium-low.
Cover and simmer 5 minutes more.
Stir in bacon, vinegar, brown sugar, salt and pepper.
Fold in chopped apple and currant jelly.
Cover and simmer 10 minutes more, or until cabbage is tender, but crisp.
Serves 6.
