Hominy - cooking recipe

Ingredients
    1 c. chopped onion
    2 garlic cloves, minced
    2 cans (15 1/2 oz.) yellow hominy, drained
    2 c. chopped tomatoes
    1 small can chopped green chilies
    1 tsp. chili powder
    1/2 tsp. ground cumin
    1/4 tsp. black pepper
    1/2 c. shredded Cheddar cheese
Preparation
    In a large skillet coated with nonstick cooking spray, saute onion and garlic until tender. Add the drained hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently. Transfer to a greased 2-quart baking dish. Bake, uncovered, in 350\u00b0 oven for 25 minutes. Sprinkle with cheese and return to oven for an additional 5 minutes or until cheese is melted.
