Cucumber Relish - cooking recipe

Ingredients
    10 c. ground cucumbers
    4 c. ground onion
    2 c. ground green bell peppers
    2 c. ground red bell peppers
    2 small jars pimentos
    1/3 c. salt
    1 tsp. nutmeg
    1/2 tsp. black pepper
    1 tsp. celery seed
    2 Tbsp. corn starch
    5 c. sugar
    3 c. vinegar
Preparation
    Mix the vegetables, pimentos and salt together. Cover and let stand in refrigerator overnight. Drain and rinse in cold water. Drain well again. Mix the remaining ingredients in a dishpan and bring to a boil. Add cucumber mixture and bring to a boil. Simmer for 20 minutes. Put in pint jars and seal. Makes 7 or 8 pints.
