Meat Balls And Rice - cooking recipe
Ingredients

2 lb. ground beef
2 eggs
1/2 onion, chopped
3 Tbsp. parsley, minced
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. red pepper
3 1/2 c. tomato juice, cooked
1/2 c. water
Preparation

Mix thoroughly beef, eggs, onion, parsley, 1 teaspoon salt and pepper.
Make 15 small meat balls.
Combine tomatoes and juice, 1/2 teaspoon salt and water in a large skillet; bring mixture to boil and add meat balls.
Cover and simmer 30 to 40 minutes. Remove meat balls from liquid.
To thicken liquid for gravy, mix 1 tablespoon flour to 3/4 cup water and pour into tomato mixture. Add meat balls and simmer 10 minutes.
Serve over rice.
