Seattle Frozen Chocolate Frango - cooking recipe

Ingredients
    1 c. butter or margarine
    2 c. sifted powdered sugar
    4 sq. (4 oz.) unsweetened chocolate, melted
    4 eggs
    3/4 tsp. peppermint flavoring
    2 tsp. vanilla
    1 c. vanilla wafer crumbs (about half 7 oz. box)
    whipped cream
    maraschino cherries
Preparation
    Using electric mixer, beat together butter and sugar until fluffy.
    Add melted chocolate and continue beating thoroughly. Add the whole eggs; beat again until fluffy.
    Beat in peppermint and vanilla flavorings.
    Sprinkle half the crumbs in each of 18 cupcake pan liners.
    Spoon chocolate mixture into liners.
    Top with remaining crumbs.
    Freeze until firm.
    When ready to serve, top with whipped cream and cherries.
    Makes 18 small, rich servings.
