Tropical Fruit Cocktail - cooking recipe

Ingredients
    1/2 c. fresh orange juice
    1/4 c. fresh lime juice
    2 Tbsp. sugar
    1 Tbsp. peeled, grated ginger root
    1 small red jalapeno pepper, seeded and cut into 1/2-inch thick chunks or slices
    1 small ripe pineapple, peeled, cored and cut into 1/2-inch thick chunks
    1 ripe yet firm banana, cut into 1/2-inch thick chunks
    1/4 c. grated fresh coconut or flaked pkg. coconut (raw or toasted)
    mint leaves (optional garnish)
Preparation
    In small bowl, combine juices, sugar, ginger root and jalapeno; stir to mix and partially dissolve sugar.
    Set aside. In large bowl combine remaining ingredients.
    Stir juice mixture again to blend.
    Drizzle over fruit and stir to coat.
    If time permits, marinate at least 1 hour in refrigerator before serving. Garnish with mint leaves.
    Makes 6 servings.
