Italian Rice Balls - cooking recipe

Ingredients
    1 c. rice, raw
    2 eggs
    1/3 c. grated Parmesan cheese
    1 small Mozzarella cheese, shredded
    1 lb. Ricotta cheese
    bread crumbs
    oil
Preparation
    Cook rice in salted water, rinse in cold water and drain.
    Add eggs.
    Mix all ingredients and refrigerate 2 to 3 hours.
    Then form into balls and dip in egg and bread crumbs.
    Fry in oil.
