Chicken Gumbo - cooking recipe
Ingredients

3 Tbsp. butter
1 lb. okra, sliced
1 small onion, chopped
1/2 small green pepper, chopped
4 c. chicken broth
1 (16 oz.) can whole tomatoes
1 bay leaf
1 tsp. salt
dash of pepper
2 c. cooked chicken
1 Tbsp. chopped parsley
hot, cooked rice
Preparation

Heat butter in large 3-quart saucepan.
Cook okra, onions and green pepper until soft.
Add broth, tomatoes with liquid, bay leaf, salt and pepper.
Heat to boiling; reduce heat and simmer, uncovered, 15 minutes.
Stir in chicken and heat through.
Stir in parsley.
Serve over rice.
