Apple Cake - cooking recipe

Ingredients
    3 c. apples, diced (about 2)
    1/4 c. apple juice
    1 c. raisins
    1/2 c. cranberry juice
    3 large eggs
    1 1/2 c. vegetable oil
    1 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1 c. chopped nuts
Preparation
    Soak diced apples in apple juice.
    Soak raisins in cranberry juice.
    Set both aside.
    Beat eggs, sugar and vegetable oil.
    Add vanilla, flour, baking soda and cinnamon.
    Combine nuts, apples and raisins with all above.
    Bake at 350\u00b0 for 1 hour or until done. Can use 9 x 13-inch pan or tube pan.
    Grease pan.
    Bake cupcakes for 40 minutes.
    Makes 36 cupcakes.
