Pat'S Cheese Potatoes - cooking recipe

Ingredients
    6 medium potatoes, diced with skins
    1 onion, chopped
    2 green peppers, chopped
    1 c. Cheddar cheese, grated
    2 Tbsp. cooking oil
Preparation
    Preheat oil in a large frypan.
    Add potatoes, onion and green peppers; cover pan.
    Cooking time is approximately 30 minutes. Stir often until potatoes are soft and brown.
    Once the potatoes have cooked, turn heat off and cover the potatoes with cheese. Cover the pan and allow time for the cheese to melt.
    Serves 6 to 8.
