Beans And Sausage - cooking recipe

Ingredients
    1 lb. pinto or red kidney beans
    1 lb. Polish sausage, sliced 1/2-inch
    1 bell pepper, chopped
    1 large onion, chopped
    2 cloves garlic, chopped
    1 stalk celery
    6 oz. tomato paste
    1/2 tsp. cayenne
    1 Tbsp. salt
    1/2 tsp. black pepper
    2 small dried chilies
    1 1/2 c. rice
Preparation
    Wash beans 2 or 3 times.
    Place sausage in large skillet. Render fat from sausage.
    Cook over medium heat until brown.
    Add vegetables to sausage and saute until soft.
    Transfer mixture to large stock or crock-pot.
    Add 2 quarts of water and remaining ingredients.
    Simmer 3 hours or all night.
    Prepare rice according to package directions.
    Serve over rice.
