Polynesian-Style Skewered Lamb And Pineapple - cooking recipe

Ingredients
    1 lb. lean lamb cubes, cut from leg
    3 Tbsp. light Thousand Island salad dressing
    2 tsp. light soy sauce
    1 tsp. ground ginger
    1 c. juice packed pineapple chunks
    several fresh basil or mint leaves (optional)
Preparation
    Combine lamb in plastic bag with dressing, soy and ginger. Marinate for 20 minutes at room temperature or all day in refrigerator.
    Drain and reserve marinade.
    Alternate chunks of lamb and pineapple on skewers (with fresh basil or mint leaves between, if desired).
    Brush skewers lightly with reserved marinade.
    Place skewers on broiler rack 2-inches from heat source.
    Broil for 8 to 10 minutes per side.
