Carol'S Prize Winning Pineapple Cheese Cake - cooking recipe

3/4 c. flour
1 tsp. baking powder
1/2 c. milk
3 Tbsp. butter or margarine
1 large or extra large egg
1 pkg. vanilla pudding mix (not instant)
1 (15 oz.) can sliced pineapple, drained (reserve juice)
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sugar
3 Tbsp. juice reserved from fruit
1 Tbsp. sugar
1/2 tsp. cinnamon
Preparation

Grease the bottom of a 10-inch glass pie pan with margarine. Combine the first 6 ingredients.
Beat 2 minutes at medium speed with electric mixer.
Pour into pan.
Pat pineapple dry with a paper towel and place over batter.
Combine cream cheese, 1/4 cup sugar and 3 tablespoons pineapple juice.
Beat 2 minutes.
Spoon on top of fruit, leaving 1-inch from sides.
Mix 1 tablespoon sugar and cinnamon; sprinkle on top.
Bake approximately 35 minutes at 350\u00b0.
Cool and serve.
Refrigerate leftovers.
