Herbed Buttermilk Chicken - cooking recipe

Ingredients
    1 large frying chicken, cut up and skinned
    1/2 c. flour, seasoned with salt, pepper and paprika
    2 Tbsp. (1/4 stick) unsalted butter
    1 Tbsp. vegetable oil
    2 Tbsp. minced shallot
    1 (1 lb.) can whole tomatoes, drained
    1 c. buttermilk
    1/4 c. chopped chives or green onion tops
    2 Tbsp. chopped dill weed
    1/2 tsp. salt
    pinch of pepper
    pinch of sugar
    2 Tbsp. fresh, chopped parsley
    noodles
Preparation
    Dry chicken pieces well and dredge in seasoned flour.
    Heat butter and oil in a large skillet.
    Add shallot and chicken.
    Cook until golden brown.
    Stir in tomatoes, buttermilk, salt, pepper and sugar.
    Reduce heat, cover and simmer 25 minutes.
    Blend in chives, dill and parsley.
    Continue cooking, uncovered, 5 minutes.
    Serve immediately over rice or noodles.
