Ingredients

2 1/2 medium-sized potatoes, peeled, grated and drained of liquid
1 1/2 tsp. flour
applesauce
1 tsp. salt
2 eggs, lightly beaten
1/3 c. shortening
Preparation

Toss the potatoes with salt, eggs and flour.
Heat the shortening in a heavy skillet and drop in spoonfuls of the potato mixture.
Fry until golden brown.
Turn and fry other side.
Serve hot with applesauce.
