Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1/2 c. chopped onion
1 red and/or 1 green pepper (1/2 c. each), chopped
1/2 c. celery, cut up
1 can stewed tomatoes or several fresh tomatoes, cut up
3/4 lb. ground beef or sausage
Preparation

Slice tomatoes in half.
Arrange in baking dish; top with seasoned bread crumbs, snip of bacon or bacon bits or pat of butter.
Add a dash of sugar and oregano.
Bake in a 350\u00b0 oven for 20 to 25 minutes.
