Quick Lunch - cooking recipe

Ingredients
    1 can tomato puree or soup
    2 to 3 eggs
    2 c. cooked rice or 4 to 5 slices toast (brown rice preferably)
Preparation
    With a whisk or blender, combine eggs with tomato and cook in a double boiler.
    Stir occasionally (more often if in a saucepan) just until thick.
    Serve on the hot rice or toast.
