Bean And Bacon Soup - cooking recipe

Ingredients
    1 lb. dried navy beans (2 1/2 c.)
    3 qt. water
    8 slices bacon, diced
    3 c. chopped onions (2 large)
    2 c. diced potatoes
    2 c. diced celery
    1 c. sliced carrots
    1 (1 lb. 14 oz.) can tomato juice (5 1/2 c.)
    4 tsp. salt
    1 tsp. pepper
    1 bay leaf
Preparation
    Combine beans and water in large kettle.
    Bring to a boil and boil 2 minutes.
    Remove from heat.
    Cover and let stand 1 hour. Fry bacon until crisp.
    Remove from skillet and add to soup.
    Cook onions in bacon drippings until soft.
    Add soup along with bacon drippings.
    Bring soup to a boil and simmer, covered, 1 hour.
    Add remaining ingredients.
    Simmer until vegetables are tender, about 30 minutes.
    Remove bay leaf.
    Makes about 4 quarts.
