Ingredients

3/4 lb. Canadian bacon, sliced
1 c. maple syrup
2 eggs
1 1/2 c. all-purpose flour
1 1/2 c. milk
1/4 c. melted butter
1 Tbsp. + 1 1/2 tsp. baking powder
1 Tbsp. sugar
1/2 tsp. salt
1 (15 oz.) can chunky applesauce
Preparation

Arrange bacon slightly overlapping in a 13 x 9-inch ungreased pan.
Pour syrup over bacon.
Beat eggs in 1-quart bowl until foamy; beat in remaining ingredients, except applesauce, until smooth.
Pour over bacon and syrup.
Bake uncovered in a 400\u00b0 oven for 20 to 25 minutes.
Meanwhile, heat applesauce to just warm. Cut pancakes into 8 pieces and top each with applesauce.
