Mandarin Orange Chicken(Low-Cal) - cooking recipe

Ingredients
    2 whole chicken breasts, split, boned and skinned
    3/4 c. orange juice
    1/2 c. chicken broth
    1 small onion, chopped
    1/2 tsp. fresh ginger, minced
    2 cans mandarin oranges, drained
    2 tsp. cornstarch
    salt and pepper to taste
Preparation
    Pour all but 3 tablespoons of juice in a large frying pan. Add broth, onion and ginger and place over medium heat.
    Bring to a boil and add the chicken.
    Cover and simmer over low heat for 20 minutes. Add mandarin oranges and simmer, uncovered, for 5 minutes.
    Add cornstarch to reserved juice and mix well. Add to frying pan.
    Cook on high to reduce mixture, stirring constantly. Add salt and pepper.
    Pour sauce over chicken.
