Carrot Muffins - cooking recipe

Ingredients
    4 c. flour
    4 c. sugar
    2 tsp. baking powder
    2 tsp. baking soda
    2 tsp. ground cinnamon
    6 c. finely shredded carrots
    2 c. cooking oil
    8 eggs
    2 (8 oz.) crushed pineapple (undrained)
    1 c. coconut
Preparation
    In a bowl, combine the flour, sugar, baking powder, baking soda and cinnamon.
    Add carrots, cooking oil and eggs.
    Beat with an electric mixer until combined.
    Pour into large muffin pan, be sure it is greased and floured.
    Bake in a 350\u00b0 oven for 30 to 40 minutes or until done.
    Makes 24 large muffins.
