Valerie'S Company Carrots - cooking recipe

Ingredients
    2 1/2 lb. thinly sliced carrots
    1/2 c. mayonnaise
    1 Tbsp. minced onion
    1 Tbsp. horseradish
    1/4 c. crushed saltines
    2 Tbsp. melted butter
    chopped parsley and paprika
    salt and pepper to taste
Preparation
    Cook carrots until tender in boiling salted water.
    Keeping 1/3 cup carrot water, drain carrots and place them in a 3-quart greased casserole or 9 x 13-inch pan.
