Salmon Patties - cooking recipe
Ingredients

3 cans salmon, drained
1 large onion
4 stalks celery
1 c. cornmeal
3 Tbsp. flour
1/2 c. milk (for moistness)
2 Tbsp. olive oil
1 1/2 c. corn or vegetable oil (for frying)
Preparation

Chop or dice onions and celery and saute in olive oil. Combine salmon, celery, onion, cornmeal and flour in mixing bowl and stir with fork until blended well.
(Add milk for moistness, only if needed.)
Form into patties and fry in corn or vegetable oil.
Notice when crust starts to form around the edges, turn over and fry on other side.
Makes about 12 to 16 patties, depending on size.
