Hawaiian Chicken - cooking recipe

Ingredients
    2 to 3 chicken breasts, cooked and cut into bite size
    14 oz. pineapple chunks
    1/4 c. brown sugar
    2 Tbsp. cornstarch
    1/2 tsp. ginger (optional)
    1 Tbsp. soy sauce
    3 Tbsp. vinegar
    1 green pepper, seeded and sliced
Preparation
    Drain pineapple chunks, reserving juice.
    Add enough water to juice to make 1 1/4 cups liquid.
    In 2-quart casserole, thoroughly combine brown sugar, cornstarch and ginger.
    Stir in soy sauce, vinegar and pineapple juice.
    Microwave, uncovered, on Full power for 4 to 5 minutes or until mixture boils and thickens, stirring 3 times.
    Stir in chicken, green pepper and pineapple.
    Microwave, covered, on Full power for 5 to 6 minutes or until well heated, stirring once or twice.
    Let stand, covered, 5 minutes.
    Serves 4. Serve over rice.
